    Egg substitutes for egg whites?

    If you have to use a substitute (vegan, for example), you could try flax seed powder mixed with water. But I'm not sure how well it would work in your recipe and it won't taste the same. Or maybe a different brand of egg substitute?: Cook's Illustrated tests egg white substitutes - Slashfood

    You could use peanuts instead of almonds. (called mazapan) I doubt it would taste anywhere near normal Marzipan, though.
