    Dinner Sunday 28th October

Bucks County PA lamb and mushroom stew (onions bacon beer carrots peas and parsnips in there too) over wide noodles with kale. Emptied my freezer of all my accumulated lamb neck pieces. (cheap, with bone and connective elements for great broth making!) I think I'll get two stews from all...

    What's your heat tolerance level?

6 on a 10 pt scale is great for me. 7 can be with the right sides of yogurt etc in Indian cuisine. I like the sppice/heat to heighten flavor not obscure it or cover it.

    Dumplings

many flat dumplings are like very thick tender noodles which cook in the broth, not on it, and taste mainly of the broth. Very traditional to the eastern shore of MD VA and DE, as well as a few other southern east coast areas.

Sorry but there is no excuse for a restaurant to get below an A for health and sanitation standards. Would you want your pilot on Delta to have a B rating? Or how about your heart surgeon?

I have been to restaurants in NYC of Bordaine, Batali, Flay, Ripert, Keller. Bordaine no longer cooks at Les Halles, but his name is still associated with it, and the chefs he trained there and brought up through the ranks are still there. I have been to Morimoto's and Garces in Phily. I am...
