    Home made Beef Stock

If roasting makes them more flavorful then I will definitely do that. I just cut up some red and green peppers for a pepper stir fry tonight. Wondering if anyone tosses the tops of the peppers into stock or if that is too strong of a flavor?

    Home made Beef Stock

We made our trip to the butcher today, and I bought some knuckle bones, thinking maybe I could make some home made stock. I have made chicken and turkey stock a lot, and we love it, but this is my first attempt at beef. The knuckles are about 1-1/2 pounds each with a good amount of fat and some...

    Center cut pork chops

I'm sure it's just that I overcook. I'm always so paranoid with pork, and sometimes it even looks pink when it's done. I guess my theory is, shoe leather is safer than undercooked pork haha. I did ask for a meat thermometer for Christmas, but I did not specify instant read. That's a problem...

    Center cut pork chops

For Christmas this year, I was given a nice selection from Omaha Steaks, which included center cut pork chops. I have never had any luck with these. I did a quick search and didn't see anything specific to center cut chops. No matter what I do, bake, pan fry......they turn out dry. I don't know...

    Cutting Board Cleaner

I told myself when I bought my latest huge cutting board that I would use one side for meat and one for vegetables. Even marked it with an X. Yeah, that went by the wayside.

    Cutting Board Cleaner

Yes, I hate dealing with chicken as it is, and it always seemed to slip around on me when I used plastic. ( which is now banned in the household haha ) I figure it makes him feel better so thats fine with me. He hates microwaves too. I haven't had one or used one since we moved in together. And...

    Cutting Board Cleaner

I know this is an old thread, but I came here looking for the best way to clean a wooden cutting board, especially after cutting chicken. ( I love chicken, but absolutely hate dealing with raw chicken! ) My husband does not like plastic boards, he feels that bits of plastic get in the food...

A larger than usual meatloaf - cooking time?

Haha! A meatloaf is such a simple thing, but it's one of our favorite meals, so it would not go to waste. I had wondered about maybe making two loafs. That sounds like a good idea. But can you freeze a cooked meatloaf with good results? Since I defrosted the meat once, I would assume it must...

A larger than usual meatloaf - cooking time?

I have to work extremely late tomorrow, meaning I need my husband to toss the meatloaf in the oven. Normally I cook one that is just over a pound, for an hour at 375. This time, I defrosted a two pound package of meat, as it was all that I had left. I have no idea how long to tell him to bake a...

Thanksgiving Dinner Fixings and a Long Drive

I understand this thinking. It's not a formal dinner at all. There's not even room for everyone at the table so we just sit around the house. The frozen lasagna is because nobody wants to cook. One year the food was ordered by mail ( from a food site ) and didn't show up, so they had to run out...

    Question about freezing

I know this seems rather simple, but I would like another opinion. I made a huge batch of beef stroganoff today, for a family dinner tomorrow. ( No time to cook it tomorrow ) But now it appears that may be moved ahead until the weekend. I have not added the sour cream yet, ( or the noodles ) so...

Beef and the "Sell By" Date

Thanks for all of the replies. I know the sell by date was just a suggestion. Heck, Walmart's sell by date is always 7 days in the future, while my local grocery store uses the next day. I guess I was just wondering if cooking it added some time, and you guys answered my questions. Thanks!

Beef and the "Sell By" Date

So this is something I have always wondered. My local store always dates the ground beef one day after they put it out for sale. So, let's say I bought some ground beef that says sell by Jan 26. I used it to make goulash last night ( the 27th ) Does cooking it extend the life of it? I was...
