This is sooo good, but soooooo much work! I've been reminded of why I make it about once a decade.

Today, I got the migraine that sort of goes with yesterday's headache. Today I got the visuals and a very mild headache for about two hours. Not bad enough to be worth taking anything for it, but I sure got spacey and feeling weird.

So, I had a very simple supper. I toasted some whole grain bread. I smeared mayo on one piece, put some lettuce on it along with a cut up, cooked, fingerling potato. Seasoned that with salt & pepper, and then I smeared a really nice goat cheese with basil and chives on the other piece of bread. It was yummy, but not photogenic enough to be picture worthy.
