Meatless or Meatloaf Monday, January 9, 2023 - What's for Dinner?

I had a package of bacon that has been sitting in the fridge for a while. I didn't want it to go off, so I decided to make a Danish dish that uses a bunch of bacon. Turns out that I didn't need to panic. The best before date was 2023 January 19. But, it still seemed like a good idea.

It's called "brandene kærlighed" (Danish for burning love). It's bacon and onions fried up and served around some mashed potatoes. The whole thing is topped with chopped parsley. I served that with rødkål (Danish sweet & sour cabbage) that I had in the fridge. Pickled beets would have been good, if I had some. Delicious, rib sticking food.

@Kathleen, I forgot about your divided plates! I meant to get a set for Goober for Christmas.

@GinnyPNW, nothing worse than a barking dog to ruin your day.

@taxlady, there are days that I might have to call that potato dish "heartburn love", but I would make and eat it anyway!

Loverly was over with her two step-critters, so I introduced them to an old family favorite - potatoes and hot dogs with onions. Well, the kids' pan didn't have onions, just hot dog rounds and potato cubes. And The Boy (9 years old) had just a couple of potato cubes because they get stuck in his braces. That's OK, The Girl (8) had her share of potatoes and his. Loverly made off with the leftovers for her lunch tomorrow. We forgot how noisy two kids can be. o_O
 
Pan-fried strip steak, mushroom caps (sautéed in the pan drippings & fond, & a splash of Maggi), green beans, and Knorr's Spanish rice side.
My blend dipping sauce for steak on the side.

Meatloaf with mashed potatoes and Brussel sprouts with chestnuts. I received a "Rachel Ray" meatloaf pan. It yielded a pretty meatloaf so I thought I would share!
YUM!! What's on top of your meatloaf? Tomato sauce? Recipe please.

Where did you get your divided plates?

Remember that I am truly a petulant child when it comes to some food mixing before it touches my mouth. I have several divider plates. My mother bought me my first one in an attempt to shame me into eating like an adult. I loved the plate and used it with love and pride. Took me about 10 years to realize the purchase was not done for love and this backfired on her. :LOL:

I found several from my grandparent's home where they were used in their diner. I have found them in thrift stores, including a divider plate with a blue willow pattern. And PF sent me a porcelain TV tray set one year. ? I don't use them for every meal, but....the thought of Brussel sprout/chestnut juice mixing with meatloaf juices and flowing into the mashed potatoes? Nope...could not chance it. ?

The plate in the picture was made by Corelle, but I am sure they could be found on Amazon. "Divider plates for adults." ;)

Where did you get your divided plates?
It's canned tomato sauce mixed with a bit of Worcestershire sauce and a tiny bit of brown sugar and mustard.

The meatloaf had 2 pounds of ground beef, some bread soaked with a bit of milk, 1 onion - chopped, about a 1.5 cups of tomato sauce, salt, pepper, and a bit of mustard. Not fancy. But I had bread that needed used. I'll likely add an egg next time. I often use oatmeal as a binder and omit the milk....and I forgot to add a spoon of Worcestershire sauce in this go-around.
