I'm staring at that shrimp salad Kgirl, I see two round smooth things that for the life of me look like sliced fingerling potatoes. What are they? What a great idea for starters, stuffed into those mini peppers.

The Shrimp that I pulled out from the deep freeze were kinda big, so I chopped them up so that they'd fit in the mini peppers.
I have a bit leftover, so that will go into a sandwich along with some arugula sprouts.
 
LOL, I thought you meant the shrimp salad was already made and frozen. But thank you for the link - always looking for shrimp recipes. :pig::chef::pig::chef::pig:
 
I made my chicken stock yesterday, and it jellied nicely.

Finished the soup today.
Chicken soup over rice topped with parmigiano reggiano & pecorino romano cheeses for lunch.

Made a sammie using a flour tortilla I folded in half and spread a little mayo, then added an havarti cheese slice, along with a couple slices of Boar's Head Milano salami. My sides were some cherry tomatoes and baby cucumbers. I washed it down with root beer I made using our SodaStream device. Had a Lindt dark chocolate truffle for dessert.
 
Lunch was brie & blue cheese, stoned wheat crackers, scallion pancake, smoked trout, and watermelon chunks.
Then DD and I went for a ride upstate. Trees are starting to turn. It was a beautiful fall day.
Pot roast is in the Instant Pot for dinner.

I made a salad on a Naan thingy. It was very good. I made some meatballs, much like I do with the Easy Kabob, but made them into meatballs instead. That way, I could bake them in the oven instead of having to stand in the cold to use the gas grill. Naan, humus, lettuce, tomatoes, olives, pepperoncini's, mushrooms, shredded zuke, meatballs, tzatziki, Italian dressing and some feta...ta-da...I think that was everything?

I'm going to use yesterday's LO turkey to make a version of Superbird Sandwiches. So, turkey, bacon, tomato and cheese (maybe sharp cheddar?) on sourdough bread. I think I'll back the bacon, zap the turkey in the microwave, assemble the sands and then airfry them instead of grilling in a pan or otherwise. Will probably have some chips with the sandwiches. Later I'll make some coleslaw to go with tonight's wings....but that will be after a much needed pedi! ;)
 
I made some guacamole today, maybe the last batch, using fresh peppers and tomatoes, from the garden (though it's not really bad, using the frozen ones!). I also went out and pulled a small scallion, for the onion part of it. And next to the scallions, were a few sugar snap peas - something I eat as a snack, that are like a dessert! I rarely eat those any other way.

I had totally forgotten about the Superbird Sandwich! Haven't been to a Denny's in ages. Now you have me wanting one. Maybe I will buy a turkey for T-day. Better yet, some quality turkey breast from the deli? Decisions decisions...

We stopped going to Denny's some years ago. #1, there isn't one around here. #2, when we've traveled and stopped at one or two, we found them just not the same! Example: I wanted to verify my memory of the Superbird, did a DuckDuckGo search and found that it is now made with "Chicken Ham". Just what might Chicken Ham be?

Anyway, ours turned out great! Now, I'm off to the spa for a pedi!
 
I have read about a Japanese coldcut that is called "chicken ham". But, I seem to remember that the chicken never gets cooked. I'm going to do a DuckDuckGo search for that.

*Update* I found a recipe for torihamu. It does get cooked. Sous-vide sounds perfect for this.

Well, since the website I spotted seems to be the Denny's Menu, (Link: Super Bird on Denny's Menu) I'm guessing that turkey has gotten too pricey to continue to use? Chicken, ham or otherwise, won't be the same...but the good news is, I can make it better, cheaper, faster...at home! Woo hoo! I'm tellin' ya, that was one good sandwich!!! And using stuff I usually have on hand, save the turkey...but I make that often enough too. Just have to remember to make Superbirds with the leftovers.

UPDATE: I just took a closer look at that website...and it doesn't appear to be the real Denny's or at least not the Denny's here in the States! No wonder it is "chicken ham"???
