Left jars in canner overnight and re-processing - are they safe?

Perfect, thank you!!!!! I did wonder about the taste too, but knowing that it is at least safe, I feel safe tasting it. I'm pretty bummed I did this....I timed it and knew it would be a later session but told myself I was fine to stay awake....I won't do that again. That's the one problem with...

Canning soup - question about the chicken

Okay, thank you. That is what the "smart" side of my brain was telling me, ha! But then I had this other side saying...."well, is that really smart....?" - I still get really nervous every time I eat one of my home canned foods and I've been doing this for about a year now....I do eat it, and...

Canning soup - question about the chicken

I think this may be a silly question but I want to double check because now I hesitate to eat it. I followed an approved recipe for a southwest style chicken soup for canning. The recipe stated to boil the chicken and then cube or shred it. I wanted more flavor to the chicken, so instead of...

Left jars in canner overnight and re-processing - are they safe?

Perfect! Thank you! Do you happen to know whether it's safe after leaving jars in the canner all night? I was worried that maybe them sitting in a warm environment like that overnight might create some sort of weird bacteria? I guess if the 1st one sealed, it would be protected from that and...

Left jars in canner overnight and re-processing - are they safe?

Hi. I made a mistake and fell asleep before my canning round ended....I used a presto electric canner (I know there are debates on those, I've done tons of research and I'm comfortable using for the short run - I use both stove top and electric (this when doing larges batches and want several...

How/where do you find if something is safe to can?

I apologize for all the posts this weekend. I'm on a canning roll....Here's my question - how/where do I find if a recipe or item is safe to can? For example, I would love to pressure can caramelized onions. I know you are able to can onions in many recipes, including an onion jam. I also know...

Raw pack chicken (post-canning) - is this too low (picture attached)

Hi! There is an updated guideline that says to raw pack chicken with 1 1/4 headspace. I did this, but it shrunk alot.....I use air dried organic chicken, I'm afraid that gave me too little natural broth with my raw pack too? Is this safe to eat? See picture attached. The liquid seems about 1/2...

    Two questions about canning potatoes

Thanks! Is there one type that you found to taste better and have better consistency?

    Two questions about canning potatoes

Thank you for the reply. I'll go with the pre-boil but go with larger cuts than I have. Another worry I had with pre-boil is making them even more mushy. But my original batch, I think I cut too small. If I go to full small potatoes or 2 inch cuts, it should be better, hopefully.

    Two questions about canning potatoes

Thank you. These are very helpful links! I think I'll throw away the 20 jars I already canned :-( It sounds like my problem isn't the type that I canned but the fact that I set them overnight in the fridge with water instead of pre-boiling....they were cut very small (probably smaller than I...

    Canning ground beef (taco)

Thank you taxlady & Blissful. I think I'll stick with adding the water to the cans. I was leaning to feeling like I should add the water but the USDA chili con carne recipe made me question, thinking, well, maybe it's okay with no water, or maybe just a little. I will stick to adding water to...

    Canning ground beef (taco)

Thank you. I do worry about the risks, that is why I'm asking the question here. I'm newer to canning and read that you can change up recipes as long as following the ingredients canning guidelines. Regarding the liquid in canning meats, this is very new to me. I just started to test the waters...

    Canning ground beef (taco)

Hi - I saw a couple of videos about canning ground beef with taco seasoning added. The ground beef was mostly cooked, like the raw pack method, but no water was added to the jars in any of the videos I saw about this. Reading USDA about canning ground beef, you are supposed to add liquid to your...
