There is a slight flaw. It seems that the slightest breese keeps unrolling the paper towels. If you flatten the roll a little it will not roll off but the wind just unwraps the towels. I'm thinking how to stop that.

I built a UDS with a weber lid and need to know where you drilled your holes to pass the probe & wire to the inside of the UDS. Do you use the probes on the bottom rack or top, if you have meat on both racks? What size hole do you drill? I'm not crazy about dropping the probes through the vent...

I welded this piece. It's my 3rd time welding.

I made my 1st Mod for the new weber performer. 1 1/4 pipe nipple cut in half. 3/8" rod, some welding. paint, drill 2 holes. 2 self tapping screws.

Does anyone use a defuser between the charcoal & the meat in their UDS. If so, do you use it all the time or just for certain types of meat.

My son made this for his vertical smoker. He's going to work on mine this week. Cost around $4 to make plus his labor. I'm going using a weber grate for the bottom of mine.
