Thank you @pepperhead212 , it was very good. It would have been tastier with a little salt but I must be disciplined, and stick to my new rule of not adding salt to my dishes. (as per medical advice)

Seeing as I am at least 6 hours ahead of most of you, I'll post my lunch for today here , Wednesday 8th May. Pearl barley salad (or pearled barley? 🤔). We call it "orzo perlato" 😀. I simply added tomatoes, cucumbers, cannellini beans and lettuce, onions, with EVOO of course 😉.

Pasta with mushrooms and then as a second course, oven roasted lamp-chops with a green salad on the side.

Today's dish, made with mixed grains and red rice. I stir fried onions, zucchini, carrots, celery, string beans in EVOO, then added the boiled grains mixture.

I've recently started experimenting with cooked grains and mixes, to substitute pasta. For the first time in my house I have packets of farro, barley, red rice with mixed cereals, brown rice, mixed grains with mixed legumes. Refined carbs are not advisable for people like me, with hypertension...

Yes, I understand, it's a huge advantage being influenced by different cultures. I've been living in Italy now for 30 years, a few years longer than my time in London, and being of Italian origins anyway, I feel I've become "completely" Italian now, in my ways, if that sounds right? I still...

I mum only cooked "Italian-Style" food anyway, so I had no problems, and living in North London, the evening meal was called "dinner".
