Was going to have some of the courgette and basil soup I made yesterday, but not in the mood for it, going with a fish salad instead.

How did you know?! Haha I can safely say I've never touched white lightning and certainly don't plan on trying it! I'm all for making recipes healthy. I enjoy taking something and bumping up the healthiness whilst bumping down the calorie count. Funny I sup cider like a bugger yet am a healthy...

Fish salad for me. Can't be bothered cooking much, got an addiction to seafood at the moment, so a win all round. Having a homemade tomato sauce mixed into the salad, then serving the fish on top. Lazy day/past 2 weeks.

Cooking Light has some pretty nice recipes.
