    How to use Thai peppers?

You could make a quick Pad Krapao if you had some thai basil. I made some up on the weekend and it tasted better than anything I ever got in a restaurant. It uses a few thai chillies, as it's a dish with a bit of bite to it! Diver D

    Tell me about "pawpaws!"

We grow heaps of pawpaws here in Oz. Personally, I can't stand the taste, but it's a very popular fruit grown in the tropics. Interesting fact is that there are actually different male and female trees. When I lived in the tropics of N. Queensland, a pawpaw tree just started growing in the...

    Bear Steak

My dad told me that he ate bear once; he said it was quite tough, but like a lot of things, I guess it's the way you cook it. I wouldn't think that bear was good to eat being a top level predator, but hey, I'd try anything once! Will be keen to hear how it turns out! :-)

    Best by Date?

My point exactly! There are a number of foods that don't expire per se. Honey, for example, can never be subject to mould or bacteria so it will never spoil. Salt, sugar etc will never spoil as well, but it doesn't stop ants from attacking it ;-)

    Fried Alligator

We eat crocodile down here (mostly just the tail), and it tastes great! I know it's stereotyping by saying that it "tastes like chicken", but it really does. I don't know why it isn't more popular down here because crocs are farmed now.

Eating avocado - are you supposed to mix it with something or cook it from raw?

I took me a while to warm up to avocado, but it is really healthy and full of healthy fats and I really enjoy it. I've found that I love it best with sushi, particularly in nori rolls where you combine the avocado with some smoked salmon. Combine the healthy fats of the avocado with the omega 3...

    Greetings from Down Under!

Australians are renown for shortening words and phrases into slang. For example: afternoon - arvo ("Going to the beach this arvo") sandwich - sanga ("Who wants a toasted tomato sang for lunch?" garbageman - garbo ("the garbo made a lot of noise this morning") politicians - pollies ("The pollies...

    Best by Date?

That should be no problem. There's a big difference between a "best before" date and a "use by" date. When I was in the Army years ago, most of the ration packs had things like M&Ms etc in them (for quick energy) and they were at least 8 months past its best before date, but they still tasted...

    Greetings from Down Under!

Trust me, Emu is actually a red meat with no fat on it whatsoever. If you marinade it in a bit of soy sauce and fry it up like a stir fry, the taste is unreal and and much better than steak. Kangaroo is a bit gamey and is better suited to a curry or a satay as the taste is a bit strong. It's...

    Favorite Cooking Show?

I grew up watching Martin Yan and Yan Can Cook (awesomely simple stir fry recipes, along with the 'Apron of the Day' ;-) ). I always loved the way Martin would cook with so much enthusiasm!. When I got older, I used to love watching Iron Chef, as I found that is where the real cooking talent...

    Greetings from Down Under!

Thanks for the welcome! Sorry, mate. As my dad (a Canuck) would say about vegemite, "I stepped in too much of it on the farm to want to put it on a slice of bread" :-) Mind you, here's a tip for anyone wanting to eat something Aussie : Emu ! If anyone here has eaten it, you'll know that it...

Hey there, Chief! Will PM you my email address. Would love to have a look through them and see what culinary delights you have. If there are some really quick ones, even better, as one of our playlists is dedicated to really fast recipes and called "Quickies" ("Are *you* up for a quickie? ;-)"...

    Greetings from Down Under!

That we do! We try to make it more entertaining than your average "and now you add a tsp of salt....and then you add some sugar....and then you add some zzzzzzzzzzzzzzzzz!" kind of cooking show. We like to make stuff that is easy, full of taste and kids will love (my kids are really fussy...

    I have written a cookbook....

If anyone has a cookbook they'd like a bit of cross promotion for, me and a mate have a cooking channel on Youtube (see link in the sig block) if you'd like us to film ourselves making your recipes! We're always on the lookout for new recipes, but we've been toying with the idea of taking a...

Cooking the national dish of every country

Hi Jason, What's been happening with your around the world food tour? How many countries did you end up getting to? Is there a way of showing the videos here or embedding them in the posts? Where's the next country stop? :-) Diver Doug
