    Petty Vents

Ugh! My sleeping schedule is all messed up lately. I've been waking up at 3:00 a.m. This morning I got up to do laundry then went back to bed close to 4:00 just to toss and turn till 6:45 when I get up to cook breakfast. Melatonin is not working for me anymore. Could it be my age? LOL I'm...

    Good Morning Thread

Good evening everyone! I woke up this morning to fix a delicious breakfast for my husband and kids before I sent them off to work and school. Then I began doing some intense search on my future Etsy home business. I'm glad to be back here on the DC boards. I've missed it!

    Enchiladas verdes

Thanks guys! I think I'll add some cream cheese to my sauce next time. My trial was not too bad. The sauce was a bit tart although I added a bit of sugar to it. I used 8 tomatillos and one serrano pepper (a couple of kids cannot eat it too spicy). Brought them to a quick boil, pureed them...

    Going MIA

I've been away for a very long time and so glad to be back! I've missed you all and look forward to meeting new members. I've been teaching little ones at a local charter school. I recently resigned my job because of the curriculum that was adopted this year-Direct Instruction. I was about...

What have you had for breakfast lately?

For the last 12 weeks, my breakfast has consisted of egg whites, turkey bacon, light whole wheat bread, oatmeal with skim milk topped with cinnamon and blueberries, baked sweet potato with a side of light cottage cheese and I feel incredible!!! I may have shedded a few pounds too! :)

Tired of our routine chicken entrée

I sautee my chicken pieces with onions, bell peppers and stewed tomatoes. Add some garlic and a dash of cumin. Separate chicken from bone and shred with veggies included. On a lightly oiled pan, heat corn tortillas, add the shredded chicken with veggies to each tortilla, top with Mexican...

    How do I cook clams?

I have frozen raw clams. How long do I steam them for, and how do I prepare them after they are steamed?

    Venting on a Happy Note

My kids make me so proud! They (9th and 11th graders) are attending a charter school this year that's preparing them for college. They're both doing very well and have become more mature in every way. I met with one of my daughter's teachers today and he said my girl (9th grader) is extremely...

Easter key lime pie was TOO bitter/sweet

I found a 5 star rated key lime pie on foodnetwork and decided to make it for my guests at our Easter gathering. Turns out it was extremely bitter and sweet! Ick! I'm still eating what was left of it (which was quite a bit) since no one really enjoyed it. Thanks to my sister's green jello...
