    Envelope arrived today with not one but 2 sets of the bolt/washers. That will allow me to take it on this trip so that is all good.     Most of the time I love tending the fire and letting the wsm do its thing. Sometime though life kicks in and trusting the kids to tend it....or my wife, is just out of the question. At that time it sure does come in handy.

    Bob, Is yours having the issue where it doesn't find the temp or blower probes ? I am now having to reset mine with every use. I will have to tske it into the office one day and try updating the software. I can't do it at home since all computers are mac.

    Are you still in town ? If you go to jacks then the one out of downtown is better. if you get south of town then mickey roos is pretty good brisket and even further south JJ's is better pork then what you will find downtown

    My contribution to earth day

    Smoked it at 250 over lump and cherry. Only loosely tented it with foil after I pulled it off the smoke. Rubbed with DDogs maple..cut the salt waaaaayyy back in the brine and added some of that as well. Ended up really tasty.

    My brother has this 22 pounder in the freezer and decided we should smoke it. It was one left over from November. A store brand that was self basting. Cooked it over lump and cherry. Looks good, hope it tastes alright. Went much faster than last weekends 20lbs of butts and 7 racks of loin backs...

    I have a friend in Jersey that is an alcohol buyer for a handful of restaurants. Normal markup is 300% on alcohol. Guess they have to make their money somewhere. :shock:
