A very mild Thai Curry
• Bunch of spring onions (chopped)
• Small bunch of coriander (chopped)
• 4 chicken fillets (diced)
• 1/2 can coconut milk
• Juice and zest of 1 lime
• 1 tbsp vegetable oil
• Basmati rice
Fry the chicken in the vegetable oil until cooked through.
