This is a quick and easy soup to make that is absolutely delicious and full of intense flavor. If you like onions, this might be the soup for you.

Creamy Green Onion Soup

Ingredients
- 4 bunches green onions, cleaned and roots removed
- 1 tbsp salted butter
- small fistful of fresh parsley
- 2 pinches of white pepper
- pinch of celery seed
- pinch of 5 spice powder
- dash of nutmeg
- 3/4 cup cream
- 2 cups water

Directions
Melt the butter in the pan at medium high heat. Add the green onions. Cook until just starting to brown. Add the parsley and spices. Cook a couple more minute, until spices and parsley become aromatic. Remove pan from heat. Place pan contents in blender or food processor and blend until smooth. Return to pan. (Don't clean the blender yet.) Turn heat down to medium low and cook the onion and her past for about 5 minutes.

Add the cream and 1 cup of the water to the blender/food processor. Blend, allowing the liquid to pick up any onion paste remains. Add this mix and the rest of the water to the pan. Cook an additional 5 to 10 minutes if desired to let flavors blend more. Taste and adjust salt as needed.

Can be thickened using preferred method if desired. Can be served over roasted meat, potatoes, or rice, or eaten as is.
 
That sounds really good. I saved it to CMT (Copy Me That). How many servings does that make?

I think I will blend that with an immersion blender, right in the pot. Less effort and less clean up. I know that works because, I already do that with two soup recipes.
