Although NOT Chinese Fries, I've made this Chinese Potato Dish, recommend by my son who lives in China, and it was really good.

I have had something that looks like that and the recipe sounds right. It was at our favourite Chinese resto, a hole in the wall type family run place. We really like those potatoes. I have saved the recipe to CMT.

One of the biggest eye-openers on my first visit to Thailand was that a lot of the curries were thin. Very tasty, but like a soup.
Not at all what I expected and knew. These days i don't bind/thicken my curries anymore.

But if you do want a thicker curry, go half amount coconut milk or cream and add creamed coconut (it thickens the curry and actually is coconut)
I didn't realize that the curries were much thinner in Thailand. I'll take that into consideration. I didn't try to thicken those curries we had for supper. I just thought that there was too much sauce. I noticed with the one I started first, so I was more cautious with the amount of coconut milk I added to the second one.

Do they use a lot of rice with the curries? Do they serve them in bowls? With spoons?

I do happen to have several blocks of creamed coconut. That stuff is very handy and it keeps forever in the fridge, once it's opened.

I never even heard of it before , until my son raved about it. He gets to eat in the school cafeteria ( where he works), and they are always making different ( non American ) Chinese dishes. He told me about it. I did search and tried it. It was very good. There was also a peanut dish he really liked. I haven't tried that one yet ( and think I lost the recipe). My son doesnt cook ( his girlfriend does), so Get very little insight when He tries a new dish other than basic ingredients, and if it was good or not, with an occasional picture. Apparently his GF is a very good cooks Im hoping to learn a few things from her.

Yes. Rice is very important.
Curry will generally come in a bowl or deep plate with rice, but you could easily have more than one type of curry on your plate. Rice in the centre, curries around it.
Spoon is standard. Only noodles are eaten with chopsticks (noodle soup with a spoon and chopsticks)

I liked going to the market in the morning. There are stalls there with a variety of dishes. You say what you want (in my case, I pointed), get your plate and join the long table. Water, condiments & some pickles are on the table.

I need to go back!

I'm going to have to try that one too.
Actually I didnt. Good eye!! Thanks for the heads up,definitly going to give it a go, I love potatoes and love cumin. To me, cumin and potatoes is one of those perfect matches in flavor. When I think of cumin, I dont think about Chinese food ( I think I had a similar thread awhile back about some spice in Japanese food that seemed strange to me).

I just actually read the recipe ( instead of just looking at the picture ). Perfect recipe to make the baby potatoes I have . And no peeling !!!! Definitely will make.
 
I made these cumin potatoes tonight, w/o oil, and I cubed the potatoes since I didn't have the little ones. I made it for myself, since mr bliss is at his bee meeting. I made it hot, with red pepper flakes, delicious! I'll have no problem finishing out the 2.5 lbs of potatoes, by myself! Not in one sitting, lol.

They are delicious. They taste exactly like the ingredient list, lol. The cumin is good, the onions give it some moisture. The red eppper flakes make it a little hot. I'd make it again!
