Nat'l Potato Day ~ What's For Dinner? ~ 10/27/2022

I had some sauteed chicken tenders, 3-cheese scalloped potatoes, and some baby green beans. Have enough leftover for supper after work tomorrow.
 
I'm trying Hobo Sandwiches in the AirFryer. We'll see? I've never tried doing them in the AirFryer, but thinking it might do a good job of them.
 
I was going to make leek and potato soup, but I got this craving for hamburgers from a local resto that specializes in them and does a good job of making them.
 
@Kathleen, congrats on the retirement! Who will have the harder time adjusting, you or Frank? :sneaky:


We took a drive to the butcher shop down the road from Loverly's place. Bought some smoked pork chops. Cooked them up with 2# of green beans. Nuked a Yukon gold potato each. Aldi mini eclairs for dessert.

Dang I didn't know there was a potato day or I'd have changed our menu!
Cauliflower wings and stir fry sauce for dinner yesterday.
 
It was a recipe from Home Ec class, Junior High School. Open face, slice of bread, slice of cheese, slice of tomato, bacon and topped with raw rings of onion. Bake and serve.

It was good done in the Airfryer.
I googled it when I read your post. You will not be surprised there are many versions of hobo sandwich recipes.
 
Speaking of Hobo recipes...years ago, in Santa Monica, there was a restaurant called "The Stew Kettle". There may have been others around, but the only one I visited was the one in Santa Monica. Anyway, my very favorite stew was the "Hobo Stew". It was a veggie stew with 2 big beef ribs sticking up out of the kettle/bowl. It was wonderful. ?
