What's the affect of flour hydration on overall hydration in pizza dough?

No oil for me and relatively low hydration. But then I like thin crusts and got a pizza oven that I can get to 400 oC, probably more. Bottom line is: play. Hydration, temperature and time amongst others. Try a biga or the other one (name is escaping me) or sourdough and you probably find a slow...

Recommend me uses for rice flour!

I've toasted jasmine rice and then ground for larb. Tastes great and works well with other salads, but I think commercial rice flour is too fine to do something like that

Life Changes and how to adjust cooking habits...

@pepperhead212 I probably didn't explain proper. What I tried to say is if I make a stir fry or something I prob want to use bell pepper (red and green) onion, tomato, maybe a leek and some meat Now we are already talking about enough food for 2-3 people maybe 4 But if I would want to cook for...

How far ahead can I prep these items??

What do you want to make & why do you want to prep far in advance? I think if I wanted to make something with onions and garlic, I would cook/fry them and keep like that in a tupperware in the fridge. But in practice I prep and cook the full dish. Onions tend to go off, get sulfuric, once cut.

Life Changes and how to adjust cooking habits...

Cook as you usually do and put a portion in the freezer.... Cooking for 1 is boring as you can hardly use any ingredients But other than that, I don't really see the problem. You just cook a bit less. From 4 to 3, multiply everything by 0.75, although you may have to adjust liquid. Cooking time...

Recommend me uses for rice flour!

I use it on the wooden pizza peel to launch the pizza. Works better than flour. I still want to try make rice noodles. I've done it before over a pot of boiling water, but I'm trying to find a different way. And dumplings I think the bread normally used for banh mi contains rice flour as well

Curing cast iron grill grates with conflicting info?

I generally don't bother too much. I will put some oil on it and then put on the grill, leave them to geat through and through and then just start using them Oil smokes when it gets real hot so that's normal. Most important is probably to make sure your grid is properly hot before you put...

    Finally bought a bench scraper

I bought a scraper some years ago when I decided I should learn how to bake sourdough bread. I use it occasionally. I tend to use my Thai cleavers much more often.

I think I've messed up here...

Oh no.. I would never do that. I just love a good mystery and a riddle :) I would be to stubborn to throw them out. Frankly, I would toss all of them together. Add water or milk and make it all into flatbreads. Leavened/unleavened/bit sweet/not sweet, who cares ;)

Turmeric. what is it good for?

It does have flavour. Definitely very bitter if you use too much of it. Maybe try getting some fresh turmeric, or a fresh(er) part of dried and ground

Yes I have and I like them :) To my upbringing (in the Netherlands, they are just thin pancakes though. Crepe Suzette totally appeals to my inner pyromaniac

I think I've messed up here...

And in semantics.... For me, crepes are thinner than pancakes but use more or less the same mixture. Definitely no sugar https://en.m.wikipedia.org/wiki/Pannenkoek

Just out of curiosity: What is in pancake mix? For me (European) it would be flour, milk, eggs and a little salt. No sugar

    Can chimney starter damage Weber?

I agree. There is no issue at all. After all, you can also start a fire on the bottom grid without a starter to get your fire going. It's all designed to cope with the heat. Your grid may watp a bit, but that's not an issue (I use hardwood lump charcoal that burns very hot. No issues)
