It was the chocolate challenge - so everything in the menu had to have some form of chocolate it in. The cocoa really did a nice job with the other ingredients.

When we did our cooking contests, one of my entrees used almonds in the coating. I had various-sized almond pieces ranging from dust to little chunks. It was very tasty!

Welcome to DC! I'm not sure I understand the question, but I frequently reuse oils after frying items in them. However, I store the oil in the refrigerator between uses. The color does not seem too off to me. Go by smell or taste. If it is not good, you should immediately know it.
